  1. Sep 10, 2025 Routine · 1 priority, 3 priority foundation, 4 core
    • Serious Priority

FOOD CONTACT SURFACES - WAREWASHING EQUIPMENT, CHEMICAL, TEMPERATURE, pH, CONCENTRATION AND HARDNESS

The sanitizer concentration at both the three-compartment sink and sanitizer bucket was 100 ppm, and needed to be at least 150 ppm. An employee drained and refilled the sink, but the concentration did not increase. I informed the PIC that the company that maintains the sanitizer dispenser would need to be contacted as soon as possible, and that the employees would need to manually add sanitizer to the three-compartment and buckets to reach an acceptable concentration until the issue is fixed. The PIC indicated that they understood, and would have the employees add sanitizer immediately.

Correction: Provide training to employees on proper use and concentration of sanitizer or repair or adjust warewashing equipment to provide proper sanitizer concentration.

      Code 4-501.114 (A) - (E)

      PERSON IN CHARGE - SANITIZATION

Employees at Einstein Bros explained that they clean the prep station table once a day, at end of day. I informed them that the table needed to be cleaned and sanitized every four hours, and informed the PIC that the certified food protection manager needed to effectively explain sanitization procedures to employees.

Correction: The person in charge shall ensure that utensils and equipment are properly sanitized and that proper solution temperatures, chemical concentrations, pH and exposure times are being followed..

RTE/TCS FOOD - PROPER DATE MARKING

An open package of pre-cooked hot dogs which was opened on September 8 was marked to be disposed of by September 20. I informed the PIC that ready-to-eat TCS foods such as hot dogs needed to be marked to be disposed of within seven days of opening, and they indicated that they understood.

Correction: Adjust method or procedures so that all ready-to-eat time/temperature control for safety food, if required, are provided with date marking or an effective method of identifying when a food item has exceeded 7 days. Discard improperly date marked food or food that has past the 7 day shelf life.

FOOD LABELS - BULK FOODS LABELED

Self-service donut display was not labeled and no placard was provided with required label information. The establishment was also selling re-packaged cookies without ingredient and allergen information. I informed the PIC that a label or placard was required for the donut display, and that they would need something similar if they wished to continue selling their cookies without labeling the cookies individually or keeping them behind the counter. The PIC indicated that they understood.

Correction: Bulk food label or placard information shall include: common name of food, ingredients in order of predominance, and food allergens.

EQUIPMENT AND UTENSILS - NONFOOD CONTACT SURFACES - CONSTRUCTED

The edges of the splash guards at the handwashing sink in the Einstein Bros area were covered in tape, which was not smooth. I informed the PIC that the tape would need to be removed, and they indicated that they understood.

NON-FOOD CONTACT SURFACES - CLEANING FREQUENCY

The consumer microwave had significant food build-up inside it; and the Dippin' Dots, popsicle and hard ice cream freezers had significant frost build-up along the sides. The PIC told me that the microwave was cleaned once a week, and they weren't sure how often the ice cream freezers were cleaned. I informed the PIC that these surfaces needed to be cleaned at an increased frequency to prevent the accumulation of soil residues such as food debris and frost, and they indicated that they understood.

Correction: Clean all equipment on a routine basis to prevent accumulation of soil residues.
