      TCS FOOD - HOT HOLDING

Slice of pizza in pizza warmer was hot held at 121°F. I reminded the PIC that time/temperature controlled for safety (TCS) foods being held hot need to have an internal temperature of 135F or above, and the PIC increased the temperature of the warmer during the inspection.

RTE/TCS FOOD - PROPER DATE MARKING

Containers of deli meat in the prep cooler opposite the warewashing sink were improperly date marked. They were marked to be disposed of once the food item exceeds 8 days, not 7. I explained to the PIC that the day of opening or preparation counts as day 1, so that a container of deli meat opened on March 1, for example, would need to be disposed of by the end of March 7, not March 8. The PIC indicated that they understood.

Correction: Adjust method or procedures so that all ready-to-eat time/temperature control for safety food, if required, are provided with date marking or an effective method of identifying when a food item has exceeded 7 days. Discard improperly date marked food or food that has past the 7 day shelf life.

      TOXIC SUBSTANCES - WORKING CONTAINERS

Working bottle of toxic cleaner was not labeled with the common name of the product in the warewashing area, and there was another bottle of unidentified solution in dry storage.
