Informed PIC and took side by temperatures and got 47F. PIC then moved all the coleslaw into walk in cooler to cool. PIC stated the doors are opened and close constancly on the 1 door cooler. PIC will make sure cooler is closed at all times. 1 door cooler went back down to 40F. PIC stated they will make sure coleslaw reaches less than 41F in 30 minutes.
