     Observed the establishment has a cappuccino machine that states it must be wash, rinsed, and sanitized according to the manufacturer directions. Discussing with the PIC, the PIC informed they clean the machine nightly in the 4-comp sink with detergent. The PIC did not know the machine's parts needed to be sanitized at the end of a wash and rinse step. The PIC was informed of this and instructed on types of sanitizers and informed to follow the sanitizer manufacturer instructions for food contact surfaces.

     Correction: The person in charge shall obtain training or training materials in the areas of sanitization so they are able to demonstrate knowledge and train employees and ensure the cappuccino machine and required equipment is properly WRS.
