      Container of 3 piece stack high of chicken breast in walkin cooler at 50°F has not cooled within 6 hours. Observed chicken breast was prepared on 10/30/2024 and cooling process started at 7:56am that day. Informed Kitchen Manager. Manager took side by side temperatures of 50°F and 52°F. Kitchen manager then discarded container of chicken breast. Discussed with manager the cooling process of chicken breast. Manager is going to monitor the cooling of chicken breast more frequnently, and put chicken breast into shallower pans.

      Correction: If safe, reheat food to 165°F and restart the cooling process or discard the food item. Food shall be cooled from 135°F to 70°F within 2 hours and from 70°F to 41°F within 4 hours for a total 6 hour cooling period.
