The sanitizer in the buckets was not being used according to EPA registered label use instructions and was at 100 PPM. I pointed this out to an employee, and they changed out the sanitizer container for a fresh one. After replacing the sanitizer, the concentration increased to 100 PPM, but was still too low. The employee and PIC indicated that they would contact Ecolab to confirm that enough sanitizer is being added to water. The PIC indicated that they would speak to their supervisor about alternate ways to ensure an appropriate concentration of sanitizer is available in the meantime.
Correction: Provide training to employees on proper use and concentration of sanitizer or repair or adjust warewashing equipment to provide proper sanitizer concentration.
