      Observed bags of italian beef in 3 door prep cooler located next to fryers are cold held at 49°F. Informed PIC and PIC took temperature and got 49F. PIC then discarded bags of italian beef. Observed cooler is maintaining 41F. PIC believes since the cooler is maintaining that temperature and top of cooler is left open thats why is was warm. PIC stated they will get a work order in to fix the cooler so it maintains less than 41F.

      Correction: Maintain cold time/temperature control for safety food at or below 41°F. Discard unsafe food items.

Instructed PIC that each hose has to have it own backflow preventor device or remove the backflow preventor from the one hose and place between it the hose bib and y connect so that both hoses have a backflow peventor device. PIC stated they will gwet this fixed.

      Correction: Provide air gap or backflow prevention device. Plumbing systems shall be provided with backflow prevention at each point of use in the food establishment.

PIC stated thye will try to resurface the pizza paddles again. If they cannot they will order new pizza paddles. (This is the second repeat violation).

PIC stated they clean all soiled pizza paddles and get two racks. (This is the second repeat violation).
