      Raw eggs were being stored over ready-to-eat drinks in the walk-in cooler. I explained to the PIC that the eggs need to be moved to no longer be above ready-to-eat foods, and the PIC moved the eggs to the bottom shelf during the inspection and indicated that they would speak to the person who stocks the walk-in cooler regarding acceptable storage practices moving forward.

      Correction: Reorganize food storage so that ready-to-eat foods are stored above raw animal food and raw vegetables. Discard ready-to-eat foods that show evidence of contamination.

I explained to the PIC that they need to locate the documents I gave them at the pre-licensing inspection if they don't have their own policies, and the PIC indicated that they would try to find those documents.

      Correction: Obtain training on foodborne illness signs and symptoms and provide training to employees regarding their responsibility in reporting foodborne illness signs and symptoms to the person in charge.
