      Observed cooked eggs in deep container in 2 door prep cooler at 81F has not properly cooled. Discussed with PIC when eggs were made. PIC spoke with employee and employee stated they were made and place into 2 door prep cooler at 11:30am. Took temperature at 2:20pm. PIC took temperature and got 79F. PIC then discarded container of cooked eggs.

      Correction: If safe, reheat food to 165°F and restart the cooling process or discard the food item. Food shall be cooled from 135°F to 70°F within 2 hours and from 70°F to 41°F within 4 hours for a total 6 hour cooling period.

      Observed bags of cooked wontons and bags of cooked butterfly shrimp in chest freezer are improperly date marked. Observed no date marks on these bags. PIC stated the wontons were made and frozen on 3/19/26 and shrimp was made and frozen on 3/22/26. PIC then date marked the bags.

      Correction: Adjust method or procedures so that all ready-to-eat time/temperature control for safety food, if required, are provided with date marking or an effective method of identifying when a food item has exceeded 7 days.
