Observed hotdogs in 2 door cooler are improperly date marked. Observed no date marking. PIC stated hot dogs were removed from packaging on 12/18/25 and frozen the same day. Hotdogs then were placed into 2 door cooler thaw on 12/21/25. Instructed PIC to date mark the bag of hotsdogs when they were opened and frozen. Then when hotdogs thaw, the date mark needs to be updated with the thaw date. PIC stated they will makesure they date makr the hotdogs and when they use sausage they will makesure they date mark that as well.
Correction: Adjust method or procedures so that all ready-to-eat time/temperature control for safety food, if required, are provided with date marking or an effective method of identifying when a food item has exceeded 7 days. Discard improperly date marked food or food that has past the 7 day shelf life.
