FOOD CONTACT SURFACES - WAREWASHING EQUIPMENT, CHEMICAL, TEMPERATURE, pH, CONCENTRATION AND HARDNESS

The Clean Quick sanitizer in the buckets was not being used according to EPA registered label use instructions and was at less than 150 PPM. I reminded the PIC that the sanitizer concentration needs to be at least 150 PPM, and we tested the sanitizer at the dispenser near the three compartment sink. The concentration was less than 150 PPM there as well. I instructed the PIC to contact the company that maintains the dispenser to adjust the amount of sanitizer dispensed, and the PIC indicated that they would manually add sanitizer until the issue is addressed.

Correction: Provide training to employees on proper use and concentration of sanitizer or repair or adjust warewashing equipment to provide proper sanitizer concentration.

      Code 4-501.114 (A) - (E)

      FOOD CONTACT SURFACES - SOILED

The interior left wall of the ice machine is visibly soiled with dark stains. I informed the PIC that the interior of the ice machine needs to be cleaned and sanitized, and the PIC indicated that they understood.

Correction: Maintain food contact surfaces in a clean condition.

      Code 4-601.11 (A)

CERTIFIED FOOD MANAGER – REQUIREMENT - FOOD ESTABLISHMENTS

Although the PIC indicated that the manager of the establishment had Food Protection Manager certification, there was no proof at the establishment that there is an approved or current certified food manager for this establishment. I informed the PIC that they need to submit proof of certification as soon as possible to KCPH, and to post it at the location. If there is no CFPM certificate posted at the establishment within 90 days, the conditional license for this establishment will be voided.

Correction: Provide an approved certified food protection manager in the food establishment within 90 days.

      IN-USE UTENSILS, BETWEEN USE STORAGE

Scoop was stored in sugar with the handle in contact with the sugar. I explained to the PIC that if a scoop is going to be stored in food, it needs to be stored so that the handle extends above the food. The PIC indicated that they understood.

Correction: Store in-use utensils in the food item with handle extended, on a clean surface, running dipper well or in a container of water greater than 135°F.

      Code 3-304.12

THERMOMETERS - FUNCTIONALITY - INTEGRAL OR PERMANENTLY AFFIXED MEASURING DEVICE

Reach-in coolers near mobile order station were not equipped with an integral or permanently affixed temperature measuring device. I informed the PIC that these coolers need to have a temperature measuring device installed in each, and the PIC indicated that they understood.

Correction: Provide a integral or permanently affixed temperature measuring device.
