     Observed open tray of churro batter on top of freezer in the customer self-service area is not protected from contamination. Instructed PIC to move tray away from customer self service area. PIC then removed tray and place it behind the counter.

     Correction: Provide a food shield, food guard, or other effective means to protect food from potential consumer contamination.

     Observed no thermometer is present for monitoring temperatures in foods. Person In Charge stated they had a thermometer but was not able to find one. PIC stated they will get a thermometer.

     Observed no hot water temperature at handwashing sink. Observed valve to hot water was turned off for the handwashing sink. Spoke with Person In Charge and then owner. Owner was not aware and had employee turn the vale on.

     Correction: Water temperature at a handwashing sink shall be at least 85°F and no more than 110°F.

     Observed ice cream display freezer has duct tape on it and observed paint is coming off of mixer. Instructed PIC to remove tape from ice cream display cooler and to repair chipping paint from mixer. PIC stated they will remove the tape and resurface the mixer.

     Correction: Provide non-food contact surfaces that are constructed of a corrosion resistant, nonabsorbent, and smooth material.
