Informed Person In Charge. PIC had employee discard the tortaillas, removed the spatuels and had the employee discard their gloves, wash their hands and don a new pair.

      Correction: Employees shall wash their hands after engaging in any activity that may cause their hands to become contaminated.

      PROPER COOLING METHODS - CRITERIA

      Improper cooling methods are observed for cooked shrimp. Observed container of cooked shrimp sitting out on countertop in deep pan. Discussed with PIC how long the shrimp sits out on the countertop. PIC stated two hours. Discussed the prodecures for other foods that are cooked and cooled. PIC stated rice is the same steps. They let it sit out on the counter top for 2 hours and mix it time to time then place it into a cooler. Instructed and provided education to PIC about proper cooling methods. DATCP fact sheet will be emailed over. PIC then had staff place shrimp into a shallow pan and place it into the cooler. Shrimp made in below 70F and has 4 hours to cool down to 41F.

      Correction: Adjust methods or procedures to facilitate cooling as described in 3-501.15.

PIC stated they will update the date marks and educate staff.

      Correction: Adjust method or procedures so that all ready-to-eat time/temperature control for safety food, if required, are provided with date marking or an effective method of identifying when a food item has exceeded 7 days. Discard improperly date marked food or food that has past the 7 day shelf life.
