Informed Person In Charge and PIC took temperatures. PIC got 54F for ranch. PIC stated they had place the food into prep cooler 3 hours ago. PIC then discarded all containers of housemade ranch, tartar sauce, and containers of gravy. PIC stated they will get a work order in to repair the cooler. PIC stated they will only keep non TCS Food in the cooler until the cooler is fixed. (This is the second repeat violation).

      Correction: Maintain cold time/temperature control for safety food at or below 41°F. Discard unsafe food items.
