Observed sanitized bucket filled with Crown Zap quat based santizer on cook line is not being used according to EPA registered label use instructions and is at 100 PPM. Informed PIC. PIC did not have test strips to test bucket. PIC then discarded buckets and refilled it with fresh sanitizer. Tested and got 300ppm.
Correction: Provide training to employees on proper use and concentration of sanitizer or repair or adjust warewashing equipment to provide proper sanitizer concentration.

Observed container of tuna fish and container of housemade tartar sauce is improperly date marked. Observed date mark on tuna fish was made on 3/9/2026. Discussed with PIC. PIC stated tuna fish was made and frozen on 3/9/2026 and was thawed on 3/26/26. Instructed PIC to update any TCS food items that are prepared and frozen then update the marking once it it is placed into cooler to thaw. PIC then updated the date mark. Observed housmade tartar sauce did not have date marking on it. Discussed with PIC when tartar sauce was made. PIC stated 3/25/26. PIC then date marked the tartar sauce.
Correction: Adjust method or procedures so that all ready-to-eat time/temperature control for safety food, if required, are provided with date marking or an effective method of identifying when a food item has exceeded 7 days. Discard improperly date marked food or food that has past the 7 day shelf life.
