Employee stated if it does cool down to 41F in one hour they will discard it.

      Correction: Maintain cold time/temperature control for safety food at or below 41°F. Discard unsafe food items.

Discussed with employee and employee stated those are the dates marks they were made and frozen. Employee stated Italian beef was thawed on 1/6/26 in cooler and containers of taco meat and chili thawed on 1/3/26. Instructed and provided edcuation on date marking food that is frozen, then updating the date marking when the food is thawed in the cooler. Employee stated they will update the date marking.

      Correction: Adjust method or procedures so that all ready-to-eat time/temperature control for safety food, if required, are provided with date marking or an effective method of identifying when a food item has exceeded 7 days. Discard improperly date marked food or food that has past the 7 day shelf life.
