      Observed RTE chicken tender in 1 dr upright cooler is cold held at between 42-44°F. Discussed with PIC when chicken tenders were placed in the cooler and the PIC informed the chicken tenders were placed in cooler the previous night. The PIC took a side-by-side temperature and measured a similar temperature. The PIC voluntarily discarded the chicken tenders.

      Correction: Maintain cold time/temperature control for safety food at or below 41°F. Discard unsafe food items.

The manufacturer recommended a PPM of between 200-400 PPM. The PIC remade the sanitizer which tested at 300 PPM in the 3-comp sink. The PIC replaced the sanitizer in the buckets as well.

      Correction: Provide training to employees on proper use and concentration of sanitizer or repair or adjust warewashing equipment to provide proper sanitizer concentration.
