     The Kay Quat sanitizer was not being used according to EPA registered label use instructions and was at less than 150 PPM in the three-compartment sink and sanitizer buckets. I spoke with the PIC, who removed air from the sanitizing system and replaced the sanitizer in the buckets and three-compartment sink with sanitizer of an acceptable concentration during the inspection.

     Correction: Provide training to employees on proper use and concentration of sanitizer or repair or adjust warewashing equipment to provide proper sanitizer concentration.
