Observed the 1Dr Under Counter Cooler with ambient temperatures ranging between 45F and 50F. CH Almond Milk in the cooler measured 51F and CH Heavy Cream in the cooler measured 46F. The internal thermometer of the cooler measured approx 50F. The PIC informed that the cooler has been observed recently as having cooling problems. The cooler is having problems keeping adequate temperature control. The cooler was measured when the establishment was not particularly busy and the cooler door was not opened recently. The PIC informed that the cooler temped at approx 41F when they arrive in the morning. The PIC was informed and the owner via email that the cooler should be repaired or serviced soon to allow for proper cooling of food. The PIC was informed that opened dairy products in the cooler should be discarded as there is no safe way to determine how long they were out of safe temperature range for. The PIC was informed that unopened shelf stable alternative milks may be kept and placed in a different cooler or back on the dry storage shelf if they so choose.
Correction: Provide equipment in sufficient capacity to hold food at proper temperature. Reduce food inventory or provide additional approved equipment.
