      Observed raw beef patties stored on top of paper bags on the bottom of an under counter cooler on the prepline. The patties did have wax paper between each patty but were not stored in a seperate container within the cooler. Discussed with the PIC who informed this was potentially done with the increased lunch rush and each side of the grill split the amount of beef patties. The PIC was informed that the raw beef patties must be stored in food grade container that can be WRS before storage in the cooler. The PIC was informed that the cooler has to be sanitized as well. The PIC instructed an employee to correct the problem.

      Correction: Food contact surfaces of equipment, utensils and linens shall be cleaned and sanitized before use with food. Single-use and single-service shall be maintained in a sanitary condition. Discard potentially contaminated food items.

      Observed sliced tomatoes and shredded lettuce in containers stored on the food prep counter behind the grill cold held at 71 and 74°F. Discussed with the PIC and employee the process and usage of the tomatoes and lettuce. The PIC informed the lettuce comes pre-shredded from the distributer and is stored in the coolers. The establishment slices their tomatoes. The PIC informed the tomatoes could have been sliced/prepped when they arrived earlier in the day before opening at 11am or the night prior and stored CH in the walk in cooler. The PIC informed that the tomatoes and lettuce are used relatively quickly, especially during busy times. Discussed with the PIC best practices for storage and use of the items. The PIC informed an employee to discard the items and use items stored in the undercounter coolers.

      Correction: Maintain cold time/temperature control for safety food at or below 41°F. Discard unsafe food items.

      Correction: Provide hand soap at handwashing sink to facilitate proper handwashing.
