     THERMOMETERS - FUNCTIONALITY - INTEGRAL OR PERMANENTLY AFFIXED MEASURING DEVICE

     Two-door cooler did not have a temperature measuring device installed in it. I explained to the PIC that an integral or permanently affixed measuring device needs to be installed, and they indicated that they would obtain one. In the interim, they put a non-permanently affixed thermometer in the cooler.

     Correction: Provide a integral or permanently affixed temperature measuring device.

     EQUIPMENT AND UTENSILS - FIXED , SPACING OR SEALING - INSTALLATION

     Handwashing sinks in food prep, warewashing, and bathroom areas were fixed in place and not easily movable to allow for cleaning, and were not sealed to adjoining walls. I explained to the PIC that these sinks need to be sealed for cleaning purposes, and the PIC sealed the sinks during the inspection.

     Correction: Equipment shall be spaced from wall and other equipment to allow cleaning on all sides, sealed to adjoining equipment or walls, or elevated on legs to allow for easy cleaning.

     HANDWASHING SINKS, INSTALLATION - NON-HAND OPERATED

     Handwashing sinks in warewashing and food prep areas were hand-operated. I informed the PIC that the handles of these sinks need to have long "wrist blade"-style handles, be automated, or otherwise be rendered non-hand-operated, and the PIC indicated that they understood.

     Correction: Employee handwashing sinks shall be non hand operated and if metered shall provide a flow of water without the need for reactivation for at least 15 seconds.
