PACKAGED AND UNPACKAGED FOOD - RAW OVER RTE-FOODS
Raw eggs were being stored over pre-cooked sausage in a cooler at the front of the store, and over sauces in a cooler at the back of the store. I pointed out that the eggs needed to be moved to not be above ready-to-eat foods, and the PIC had the eggs in both coolers moved to no longer be above ready-to-eat foods during the inspection.
Correction: Reorganize food storage so that ready-to-eat foods are stored above raw animal food and raw vegetables. Discard ready-to-eat foods that show evidence of contamination.

I pointed out that the CFPM certificate that was posted was expired, and the PIC showed me a current copy of a CFPM on their phone. I told them to have a copy present at the facility, and the PIC indicated that they would do so.
Correction: Post current food protection manager certification in conspicuous view within the food establishment.
