WAREWASHING - CHEMICAL SANITIZER CONCENTRATION - TEST KIT
Establishment only had expired test strips for quaternary ammonia (quat)-based sanitizer, and either didn't have chlorine-based sanitizer test strips or lacked the key to read them. I informed the PIC that they need chlorine-based strips for their dishwasher and bleach solutions, and unexpired quat-based strips for their Steramine tablets at the bar, and the PIC indicated that they understood.
Correction: Provide a test kit to allow accurate determination of the sanitization concentration.
