Observed containers of chili and container of tomato soup in 2 prep cooler are improperly date marked. Observed chili and tomatoe soup were cooled and frozen. Then they were thawed in the 2 door prep cooler without updating the date mark. Containers of chili were date marked on 9/18/25 and 10/9/25 and container of tomatoe soup was date marked on 11/15/25. PIC stated one container of chili was taken out to thaw on 12/7/2025 and the other on 12/9/2025. Container of tomatoe soup was taken out to thaw on 12/9/25. Provided education and PIC stated they will put a thaw date mark on frozen items that will be thawed. PIC stated they will update the date marks on the containers of chili and container of tomatoe soup.
Correction: Adjust method or procedures so that all ready-to-eat time/temperature control for safety food, if required, are provided with date marking or an effective method of identifying when a food item has exceeded 7 days. Discard improperly date marked food or food that has past the 7 day shelf life.
