I informed the PIC that a handwashing sink must be kept in working condition at all times to allow for frequent handwashing. The PIC informed that they were unaware it was inoperable to that extent and that the employees who use the kitchen must have been using the 3-comp sink to wash their hands. The PIC informed they would have the handwashing sink fixed quickly. After discussing the WRS procedures and use of the 3-comp sink, the PIC informed that kitchen staff have adequate utensils to to sustain their food prep until they can start their WRS procedures after. After some discussion with my supervisor, the PIC was informed they have 72hrs to repair the kitchen handwashing sink to working order and they are being provided a reinspection notice. The kitchen staff can utilize the 3-comp sink wash section to wash their hands while prepping food and once needed for WRS procedures, they must sanitize the sink and proceed with WRS of their utensils.
