Observed the bucket of quat sanitizer is not being used according to EPA registered label use instructions and is at less than 150 PPM. Observed employee using sanitizer cloth from that bucket to sanitize prep table. Informed person in charge and PIC also test sanitizer and got below 150ppm. Person In Charge stated that they change out the sanitizer buckets every hour and this bucket was past the hour mark. PIC then had employee get a new bucket of quat and resanitize the prep table. Bucket tested at 200ppm.
Correction: Provide training to employees on proper use and concentration of sanitizer or repair or adjust warewashing equipment to provide proper sanitizer concentration.
