      Sanitizer solution registered 100 ppm at the 3 comp sink. The Clean Quick Broad Quaterernary Sanitizer is not being used according to EPA registered label use instructions and is at 100 PPM. Label stated 150 ppm correct level. Employee setup sanitizer. Tested sanitizer concentration and it was 100ppm. Employee took a side by side comparsion and also got 100ppm. Employee added more sanitizer and tested at 200ppm. Informed manager of the sanitizer concentration and manager is going have more training on testing levels and getting the correct sanitizer concentration with all employees.

      Correction: Provide training to employees on proper use and concentration of sanitizer or repair or adjust warewashing equipment to provide proper sanitizer concentration.

      Observed cooked chicken tenders that had been cooled on 10/24/2024 in the kitchen walk in cooler were observed to be unwrapped or uncovered. When entering walk in cooler observed two containers of already cooked chicken tenders that were cooled the preivous day uncovered. Employee then covered the two containers of chicken tenders.

      Correction: All foods that are not part of a cooling process shall be covered at all times to prevent cross-contamination. Food shall be discarded if suspected of cross-contamination.
