      Sliced tomatoes in 1 dr cooler is cold held at 47°F. Observed that sliced tomatoes in one door cooler are at 47°F. Informed manager of the tomatoes. Manager and myself took side by side temperatures and got 47°F. Discussed the procedures of where the sliced are moved and placed. Presliced tomatoes come from a prepackaged container in the walkin cooler and then placed into a new container. Then the new containers are placed in the 1 dr cooler in the morning. Tomatoes in walkin cooler were temp at 34°F. Tomatoes were time stamped when placed in 1 dr cooler. Tomatoes where in the 1 dr cooler less than an hour and a half. Instructed manager to placed tomatoes into walkin cooler to cool . Tomatoes in walk in cooler were temp at 40°F.

      Correction: Maintain cold time/temperature control for safety food at or below 41°F. Discard unsafe food items.
