      The Smartpower sanitizer was not being used according to EPA registered label use instructions and was at less than 272 PPM DBSA. Per conversation with the PIC, Diversey is installing new detergent and sanitizer dispensers today. I explained to the PIC that they need to make sure the new sanitizer dispenser is tested to make sure an acceptable amount of sanitizer is being dispensed, and the PIC indicated that they understood.

      Correction: Provide training to employees on proper use and concentration of sanitizer or repair or adjust warewashing equipment to provide proper sanitizer concentration.

      Plumbing system not provided with an air gap or backflow prevention at the mop sink. A hose was connected to the sink without an appropriate backflow prevention device on the faucet spout. The PIC indicated that the hose would be removed and that the faucet would be connected to a sanitizer dispenser. I explained that we would still require a backflow prevention device on the mop sink.

      Correction: Provide air gap or backflow prevention device. Plumbing systems shall be provided with backflow prevention at each point of use in the food establishment.
