      Observed in 2 door prep cooler container of cooked chicken and container of cooked sausage are improperly date marked. Observed 2 trays of housemade cheescake in 2 door cooler is improplerly datemarked. Observed container of cooked chicken, container of cooked sausage and trays of cheesecake have no datemarks. Discussed with kitchen employee when these food items were prepared. Employee stated chicken and sausage were prepared on Wednesday the 24th and the cheesecake was prepared on the 25th. Employee then date marked each item.

      Correction: Adjust method or procedures so that all ready-to-eat time/temperature control for safety food, if required, are provided with date marking or an effective method of identifying when a food item has exceeded 7 days. Discard improperly date marked food or food that has past the 7 day shelf life.
