      Observed the steramine in 3 compartment sink is not being used according to EPA registered label use instructions and is less than 100 PPM. Observed employee sanitizing dishes. Tested and got less than 100ppm. Informed Person In Charge. PIC tested and got 150. Discussed with PIC and PIC stated they had just switched Quat Sanitizer. Provided education and informed PIC with stermaine minium is 200ppm and the old was at 150ppm. PIC then refilled the sink and adding more tablets and tested at 200ppm. PIC stated they will train staff to ensure the sanitizer is between 200ppm to 400ppm.

      Correction: Provide training to employees on proper use and concentration of sanitizer or repair or adjust warewashing equipment to provide proper sanitizer concentration.
