GLOVES, USE LIMITATION - SINGLE-USE GLOVES

Single-use gloves were not discarded between wiping down deli slicer with sanitizer and slicing deli meat. I pointed this out to the PIC, and informed them that any time an employee goes from one task to another, they need to discard their gloves and wash their hands before donning new gloves. I also informed them that any of the food that the employee worked with was potentially contaminated and should be discarded. The PIC indicated that they understood, and would speak with the employee.

Correction: Single-use gloves shall be discarded between tasks such as working with ready-to-eat foods or raw animal foods, when they become damaged or soiled or when interruptions occur in the operation. Discard potentially contaminated food items.

EQUIPMENT AND UTENSILS - MATERIAL FOR CONSTRUCTION AND REPAIR

A food container was being reused as a sanitizer bucket at the front of the establishment. According to the PIC, it is used to wipe down surfaces in the dining area. I informed the PIC that food containers are not designed to be reused as sanitizer buckets, and that the bucket would need to bre replaced with a commercial-grade bucket designed for multiple uses. The PIC indicated that they understood.

Correction: Discard equipment and utensils that are not: corrosion resistant, durable, able to withstand repeated warewashing, smooth, easily cleanable, nonabsorbent, and resistant to pitting, scratching, scoring or decomposition.

EQUIPMENT AND UTENSILS - NONFOOD CONTACT SURFACES - CONSTRUCTED
