     FOOD CONTACT SURFACES - WAREWASHING EQUIPMENT, CHEMICAL, TEMPERATURE, pH, CONCENTRATION AND HARDNESS

     Observed the chlorine sanitizer in the wiping buckets used in the front near the register and near the cookline measuring at 0ppm each for chlorine. The PIC informed an employee to change all wiping buckets. The remade wiping buckets measured at 50ppm and 100ppm chlorine respectively.

     Correction: Continue to monitor wiping bucket sanitizer concentrations, especially during busy times during the day.
