Chicken Nuggets and Beef Pattys in both steam table and hotbox is hot held at 120°F. PIC instructed staff to reheat chicken nuggets and beef patties to 170F. Chicken nuggets and beef patties had been in the hotbox for approximately 30 minutes. Conducted Ice Bath Calibration of facility and inspector food probes for accuracy. Food was placed in heating device at 170F. PIC discussed that the hotbox may have not been preheated or food immediately brought down for hot holding from the main kitchen.
Correction: Maintain time/temperature control for safety food at or above 135°F. Discard unsafe food items.

PIC agreed to cease use of all equipment in like condition and replace with new. PIC instructed staff to remove bins and place out of use. Replacement bins were available for use.
