PIC stated they were made and frozen on that day. PIC stated they were thawed on 4/17/26. Isntructed PIC to update the date amrking once the food item is placed into walk in cooler to thaw. PIC stated they will update the date marking.

Discard improperly date marked food or food that has past the 7 day shelf life.

CFPM stated he would have the fan replaced with a clean fan. CFPM stated he would increase the cleaning frequency of the ice scoop storage bins and rotate out fans for cleaning.

      Correction: Clean all equipment on a routine basis to prevent accumulation of soil residues. Given one week to start fan rotation and cleaning frequency.
