      I observed the Kay Quat quat sanitizer in the 3-comp sink at a higher temperature of 125F than what is recommended on its label of 65F-75F. The sanitizer concentration also measured low at 150ppm when its label recommended it to be at 200ppm. I discussed the sanitizer and the sink temperature with the PIC who informed they could control the sink temperature and stated they usually make the warewashing side of the 3-comp sink hot and they might of left it too hot for the sanitizing solution. The PIC corrected the sanitizer temperature which also measured at 200ppm. I also measured the sanitizer buckets near the NIU food prep sink and the food prepline which both measured at 100ppm. The PIC corrected the buckets after correcting the 3-comp sanitizer.

      Correction: Provide training to employees on proper use and concentration of sanitizer or repair or adjust warewashing equipment to provide proper sanitizer concentration.
