Discussed with the PIC which products are reheated TCS foods. The PIC informed the chili is cooked, cooled, and reheated for HH. The PIC was unable to describe proper reheating methods and temperatures for the chili which was temped initially at 105F, stirred to a temp of 135F. Reheating was close to the 2 hour mark and therefore chili was removed from the warming unit and heated microwave. Reheated to 165F. The PIC was informed of proper reheating and cooling methods for previously cooked TCS foods both commercially processesed and establishment made. The CFPM who is the establishment owner was informed that more education will be needed on the subject of reheating TCS foods.
Correction: The person in charge shall obtain training or training materials in the areas of proper temperature control so they are able to demonstrate knowledge and train employees.
