Instructed PIC to keep housemade TSC sauces under refrigeration. PIC then place housemade spicy mayo in cooler to cool. PIC stated thye will make sure the temperatures reaches 41F or less within 30 minutes.

Regional manager stated that all salmon and tuna must be cut before thawing. Regional manager stated additional training will occurr with staff. PIC then discarded the salmon.
