Had PIC test the quat in the 3 compartment. PIC had less than 150ppm. PIC removed knife and dishes. PIC stated they will ahve an employee wash rinse and sanitize them. PIC then drained the water and refilled the sink with sanitize. Tested again and quat is 200ppm.

      Correction: Provide training to employees on proper use and concentration of sanitizer or repair or adjust warewashing equipment to provide proper sanitizer concentration.
