     FOOD CONTACT SURFACES - CROSS CONTAMINATION

     Observed cutting board not cleaned before or after employee was resting bare hand on middle of the cutting board. Employee was about to proceed to place chicken on the cutting and cut it. Informed PIC. PIC then removed the cutting board, place in the warewashing area to be wash rinse and sanitized. PIC then got a clean cutting board and placed it on the table. PIC then educated staff.

     Correction: Clean food contact surfaces anytime contamination has occurred.

     Observed no air gap provided on ice bin/soda fountain machine located are self service area. Instructed PIC to provide a air gap. PIC stated they will get a air gap.

     Correction: Provide an air gap on water supply side to protect water supply.

     Observed 3 different handwashing sinks in the kitchen are not fixed in place and not easily movable to allow for cleaning. Observed caulk is coming off of wall and sink or observed no caulk between sink and wall. Instructed PIC to seal the sinks to the wall.. PIC stated they will get a work order in to seal it.

     Correction: Equipment shall be spaced from wall and other equipment to allow cleaning on all sides, sealed to adjoining equipment or walls, or elevated on legs to allow for easy cleaning.
