     FOOD TEMPERATURE MEASURING DEVICES - PROVIDED

     No thermometer was present for monitoring internal temperatures of foods. I pointed this out to the PIC, and they indicated that they would order an appropriate thermometer for the mobile unit.

     Correction: Provide a thermometer that is easily accessible and capable of taking temperatures in food.

     INSECTS AND RODENTS - OUTER OPENINGS - SCREENING

     There was no screening provided on the serving window of the mobile. I explained to the PIC that the service window will need to be screened, as will the door if it is going to be left open. The PIC indicated that they understood, and would obtain appropriate screening.

     Correction: Provide screens or other effective means or close openings to the outside. Doors and windows kept open to provide ventilation shall be provided with screens, air curtains or other effective means to prevent entrance of rodents and pests.
