Instructed PIC to end the pratice of using containers of ice to cold hold eggs. PIC will keep eggs in cooler.

      Observed improper cooling methods are observed for cooked rice in 2 Door Upright Cooler. Observed containers of rice being cooled in deep containers with lids on in 2 door upright cooler. Cooked rice was at 118F with 1 hour remaining to cool to 71F. Educated PIC and employee. Employee took the cooked rice place it into shallower pans and put in freezer. Took temperature in 1 hour and rice was 55F. PIC will educate staff on proper cooling methods.

      Correction: Adjust methods or procedures to facilitate cooling as described in 3-501.15.

Containers of soup had original frozen date. Containers of soup were not date with the new exceeded date. Employee indicated the containers were in prep cooler for 5 days. Employee then discarded all containers of soup.

      Correction: Adjust method or procedures so that all ready-to-eat time/temperature control for safety food, if required, are provided with date marking or an effective method of identifying when a food item has exceeded 7 days. Discard improperly date marked food or food that has past the 7 day shelf life.
