     WAREWASHING EQUIPMENT - CLEANING FREQUENCY - CLEANED BEFORE AND AFTER USE

     The wash compartment of the 3-compartment warewashing sinks requires more thorough cleaning. Buildup of food particles noted in the 'catch basin/trap/drain component' located in the bottom rear of the sink. Component may need to be disassembled to thoroughly clean out food particles & grease. Also, recomment use of a degreaser to help remove residue as eauipment that is cleaned in the sinks contain grease (rotisserie chicken equipment & parts).

     Correction: Clean wash sink of 3-compartment sink, basins, or other receptacles used for washing and rinsing equipment, utensils, or raw foods or other equipment before using.
