Correction: Adjust method or procedures so that all ready-to-eat time/temperature control for safety food, if required, are provided with date marking or an effective method of identifying when a food item has exceeded 7 days. RTE/TCS FOOD - COMBINED INGREDIENTS - DATE MARKING

After discussions with the operator it was determined that the soft serv ice cream mix holding methods were not following the requirements for datemarking. The machine is run from Monday morning to Saturday. On Saturday the machine is emptied, cleaned and sanitized. The operator was saving any remaining soft serve mix and putting it back in the machine on Monday morning. This practice needs to end as it does not break the cycle of bacterial contamination and exceeds the 7 day hold time.

Correction: Do not save any soft serve mix at the end of the week. All remaining soft serv mix must be discarded at the end of the week and cannot be added to new mix on Monday morning. This practice will break the chain of bacterial contamination.
