     The temperature of the final rinse of the high temperature dishmachine is less than 170°F. Surface of dishes were not reaching the 160 F to sanitize. High tempdishwasher final rinse temp for the dishwasher installed is 180 -195 degrees F. Neither test strip or irreversible temp device verified sanitation.

     Correction: Maintain the wash temperature in the high temperature warewashing machine at a temperature indicated in 4-501.110 (A) or indicated by the manufacturer. Manually sanitize dihes until dish machine temperature is adjusted.
