A 3 compartment sink is not provided in the manual warewashing operation. Facility has a cappuccino machine and utensils (metal tongs) for customer self-service of beef sticks in the retail area. Person in charge stated cappuccino machine components and utensils are washed in the hand washing sink in retail area and are not sanitized.
Correction: Provide a 3 compartment sink for manually washing, rinsing, and sanitizing equipment and utensils. Discontinue cappuccino sales until 3-compartment sink installed. Use alternative means, such as tissue paper, for customer self-service of beef sticks.
