     Cut melon in reach-in cooler in retail area is cold held at 46 °F. Person in charge stated melon was placed in cooler approximately 1 hour prior to inspection.

     Correction: Maintain cold time/temperature control for safety food at or below 41°F. Discard unsafe food items. Cut melon was removed from reach in cooler and placed in walk in to rapidly cool to 41. Person in charge contacted store management to discuss possibility of cooler issue vs. defrost cycle as minimal air flow noted in area of cooler.

     Product labels identify corporate name and address, which is in Texas. Products are processed and packaged at local host store: Metro Market, 6969 N. Port Washington Road, Glendale, WI.

     Correction: Label information shall include: common name of food, ingredients in order of predominance, quantity, name of business or manufacturer, color additive such canthaxanthin or astaxanthin in salmon and nutritional information. Include address of location where products are processed/packaged on labels.
