TCS FOOD - COLD HOLDING
Pepperoni melt packets (pepperoni, ham, and cheese) in prep cooler closest to the grill are cold held at 45-48 °F. Manager stated packets were assembled previous day and held in walk-in cooler. Packets were placed in prep cooler approximately 3 hours prior to inspection.
Correction: Maintain cold time/temperature control for safety food at or below 41°F. Pepperoni melt packets were moved to walk-in cooler to rapidly cool to 41 degrees F within 1 hour. In future, packets will be placed in deeper pan in top of prep cooler so that food is closer to the coldest part of unit. Additionally, fewer packets will be placed in prep cooler at a time.
