Correction: Provide containers that facilitate heat transfer, such as metal pans, and loosely cover food items during the cooling process so that heat is allowed to escape. Studies have shown that thin (2 inches or less) product cooled uncovered in walk in will cool according to parameters. Facility uses ice bath cooling at end of the day, is planning to cool breakfast items / gravy using ice bath as well.
