     UTENSIL SANITIZATION - CLEANING PROCEDURES

     Multi-use food contact surfaces, such as dishes and utensils cannot be washed, rinsed and sanitized for different guests.

     Correction: All multi-use utensils must be washed, rinsed and sanitized using approved methods, equipment and chemicals. Provide approved 3 compartment sink or approved commercial dish machine for this purpose. Test sanitizer strength in manual/mechanical methods. Provide means of testing hot water sanitization, if applicable. Provide an additinoal basin since the kitchen sink only has two basins.
